| Welcome to all Recipes Maniacs Hi Recipes Maniacs and welcome to issue 3 of Recipes Mania News. As usual I am running a few days late, but I’m sure you’re all used to that by now. The reason is that I am rebuilding the site to make it more user friendly. I am new to site building and am having to correct many initial errors that were made putting Recipes Mania together. When I have that right (About another month) I’ll be able to get into a proper routine. - Now for the good news: www.recipesmania.com is in the top 1% of websites worldwide. Thank you everybody, especially my loyal supporters who subscribe to this ezine. It couldn’t have been achieved in such a short space of time without your “word of mouth advertising.” What Happened to Your Free ebookI find myself in a Catch 22 position over this point. The truth is that I have no access to your email addresses and to date have found no way of obtaining them. When I made the promise I was of the opinion that our security system would provide me with the addresses of all subscribers. They will not. - The reason I use this system is because I promise that your email address will remain confidential and I guess this proves how good the system is because even we can’t access them. They are kept in hacker proof security and nobody can access them. You receive this ezine because I submit it to the security station, they check it for virus’s etc and when they are sure it is clean they forward it automatically to all people who have subscribed. Recipe of the MonthTeriyaki Salmon, Bombay Potato and Yogurt Dip: This fantastic dish takes about 30 minutes to prepare + 10 minutes to cook. Ingredients For the teriyaki salmon pinch of chilli flakes 2 tbsp soy sauce 2 tbsp honey 4 tbsp cider 170g/6oz salmon fillet For the Bombay potatoes ½ sweet potato, peeled and cut into cubes 1 tbsp olive oil 110g/4oz spinach ½ red onion, peeled and finely diced ½ tsp turmeric 1 tsp medium curry powder For the yogurt dip ½ red onion, peeled and finely diced 3 tbsp Greek yogurt salt freshly ground black pepper small handful of fresh chervil, chopped (Chervil is French Parsley)
Method 1. Place the chilli flakes, soy sauce, honey and cider into bowl and whisk together to combine. 2. Place the salmon into the bowl and marinate for up to ten minutes (or as long as time allows). 3. Heat a non-stick frying pan until hot. 4. Sear the salmon in the hot pan for two minutes on each side, or until cooked through. 5. Remove the salmon from the pan and allow to rest. 6. Return the pan to the heat and pour the marinade mixture into the pan. 7. Simmer gently for 3-4 minutes to reduce. 8. To make the Bombay potatoes, bring a large pan of water to the boil. 9. Cook the potato in the boiling water for 8-10 minutes, or until tender. Drain. 10. Meanwhile, heat the oil in a pan and add the spinach, cooking to wilt for 1-2 minutes. 11. Add the red onion, cooked sweet potato, turmeric and curry powder and fry for 4-5 minutes. 12. Spoon the Bombay potatoes into a 8cm/3 inch chefs' ring on a serving plate. 13. Remove the chef's ring and serve the teriyaki salmon alongside. 14. Remove the sauce from the heat and pour over the salmon. 15. To make the yogurt dip, place the onion, yogurt, seasoning and chervil in a bowl and mix together to combine.
Serve the dip alongside the salmon and potatoes.
Health Tip: Your Diet and Colon CancerI know this isn’t my area of expertise but I saw this on a science program on TV a few weeks ago and feel it is interesting due to the fact that the incidence of colon cancer in men is as high as breast cancer in women. The data is coming from a university in Auckland, New Zealand. It was noted many years ago that colon cancer is virtually non-existent in Maori’s. It was assumed that this must be connected to their natural diet and research commenced into this area with the following results: Maori diet is high in red, orange and purple fruits and vegetables; this includes Kumara (orange sweet potato), red apples, red berries like strawberries etc. and plums. The research then moved on to analyze these foodstuffs and found them to contain approximately four times the level of anti oxidants than citrus. - Previously citrus was considered to be the highest in anti oxidant content. It is this level of anti oxidant that researchers believe is the reason why these foods protect Maori’s from colon cancer. The research is ongoing but the data released to date should make all of us consider our diets. Safety in Your HomeSafety tip: After the alarm sounds? Most of us have smoke alarms fitted in our homes; why shouldn’t we they start at just a few dollars each and save hundreds of lives each year. If you are unsure ask your local fire service for their opinion. The home safety question I’d like to raise in this issue is “What plans do you have in place for when the alarm sounds?” If you are like most people that I ask you have no plan. The alarm only does half of the required job – it warns you. The second part of the job is to escape from the possible fire safely. It is during escape that most serious accidents happen and this is usually due to no pre-determined evacuation plan. Here are some tips to put a plan in place in your home: 1. When the alarm sounds assume the worst-case scenario and that is that your home is on fire. 2. The entire family must be aware of two escape plans (The fall back position is in case the preferred route is cut off by smoke or flames.) 3. During evacuation you should get down close to the floor because both heat and smoke rises. Your escape chances are greater if you are on the floor. 4. If doors and windows are deadlocked for security purposes you should be sure that the correct key is in the lock from the inside. (Again ask your local fire service how many people are injured or killed because they were unable to open deadlocked doors or windows. - I just read of a family of 4 who perished because they could get to the door but not to the key to open it.) 5. If you have children practice your escape at least once each month and teach them the rhyme “Get down low and GO GO GO” - Make safety second nature in your home. It is too late to plan your escape when a fire is burning through your home.

Short StoryThoughts from the Book of Zen: The novice monk came across an older monk sitting cross-legged by the river. The older monk was certainly not from this area because the novice had been here for many years and knew all of the local monks. He had a somewhat large stomach; an orange robe and his eyes had a very special unearthly twinkle. The novice was convinced that he had stumbled across Buddha and so asked a theological question that had been baffling him for months. In fact he had worked for months just forming the question. The old monk smiled at the novice and gave an answer that made the seemingly impossible question appear so simple. The novice was now sure that he was face-to-face with Buddha and decided to ask the question: “You are so wise and intelligent Master. Are you Buddha?” “No I am not Buddha.” The old monk replied. “Then Master you must a prophet.” “No. I am not a prophet.” The old monk assured him with a friendly smile. “Surely Master,” The young novice faltered as a wave of embarrassment swept over him. “You are not the devil?” “No.” The old monk giggled. “I am not the devil.” “Then what are you?” The old monk looked the novice in the eye and spoke very softly. “I am awake.” The point of this story is that sometimes we cannot find the right answer until we ask the right question, because until then we are not awake to the full depth of the problem.
In some oriental cultures scholars will contemplate a problem for months, even years, seeking the right question in the certain knowledge that when they are able to ask the right question they will receive the answer that will conclude the problem.
Maybe we can all learn something from this story: There is an antidote to every problem but first we must find the right question to ask. We all need to share problems at times before we find the answers. This system of problem solving has been used for centuries in Japan and other parts of Asia and it can work just as well in the west. Sometimes you even discover the answer before you find the question.
