Recipes Mania News December 2005

Hi Recipes Maniacs,

Welcome to the last issue of Recipes Mania News for 2005 and special Hi to all who are receiving it for the first time. I was checking some statistics a few days ago and discovered that our drop out rate of people who subscribe to our ezine is below 0.01%. So thank you all for your loyalty.

This month is the biggest party time in the world and accepting that we all have the right to celebrate and party from time to time we also have a responsibility to protect those around us.If you do have a drink please do not drive. Take a cab or have a designated non-drinking driver with you. There can be nothing worse for a family unit to lose somebody during the festive season. Try to imagine how you would feel if this happened to your family before you get behind the wheel of a car after drinking.

Recipe of the Month

Christmas Bombe.

This dessert is ideal as a replacement for traditional Christmas pudding and is much lighter.

Ingredients:

2 quarts (2 litres) vanilla ice-cream.

1/3 cup chopped glace pineapple.

1/3 cup chopped glace apricots

1/3 cup red glace cherries, halved.

1/4 chopped glace ginger.

1 teaspoon mixed spice.

1 teaspoon ground cinnamon.

24 ounce (700 ground) rich fruit cake.

Method:

Oil a 7-cup (1.75 litre) pudding steamer bowl and line with plastic wrap.

Combine ice-cream, fruit, ginger and spices in alarge bowl. Spoon mixture into the prepared pudding bowl. Cover; freeze for about 1 hour or until firm.

Note: Your mixture should leave a gap of about 1/2 inch (12mm) at the top of the bowl.

Cut cake in half and trim halves to fit on top of the ice-cream mixture. Press on gently and this cake will form the base of your Christmas Bombe when it is turned out onto serving dish.

Cover and freeze overnight.

Serve with Brandy sauce.
