Almond Chicken Salad

When looking for a salad with a difference, Almond Chicken Salad is a recipe that is simple, tasty and flexible in that you can use any nut that you choose from the humble peanut to the tastiest nut of all, the macadamia.

This dish will impress your family and surprise your guests. It makes a great light lunch or a side salad with a barbecue.


Ingredients

2 cups cooked diced chicken

1 cup celery

1 cup grapes (green seedless)

2 cup almonds

1/2 cup pineapple (drained)

1 Tablespoon lemon juice

Dressing Ingredients

2/3 cup Cool Whip

2/3 cup Miracle Whip

(I tried this with a diet Italian dressing and it was superb.)




Method

Combine first 6 ingredients. (May be made to this point the day before.)

Mix dressing ingredients. Stir in.

Serve with croissant or in melon bowls.
