Artichoke Salad Recipe

This easy to prepare Artichoke Salad Recipe combines artichokes, mushrooms and onions in a flavorful homemade olive oil dressing. Great to take along on picnics or as a side dish at cookouts and potluck parties.

Artichoke Hearts


  • 2 cans whole artichoke hearts, drained
  • 1 lb. fresh button mushrooms, cleaned and halved
  • 1/4 cup red onion, chopped
  • 8 to 10 fresh basil leaves, chopped small
  • 1/3 cup orange juice
  • 1 tsp sugar
  • 1/2 tsp salt
  • dash fresh black pepper
  • 1/3 cup good extra virgin olive oil


Whisk together basil leaves, orange juice, sugar, salt and olive oil until slightly thickened.

Place artichokes, mushrooms, and red onion in a large bowl.

Pour dressing over the vegetables and toss to coat well.

Can be served immediately or chilled.
