Batter Vegetable Cakes



Ingredients:

2 eggs

Self Raising Flour (All purpose flour)

Pinch salt.

Milk.

Corn kernels

Chopped onion

Chopped broccoli

Bacon pieces.

Method:

Make batter of sifted flour, salt, eggs and milk. Whisk vigorously until smooth.

Mix the veg (you can be as inventive as you wish)

Cover baking tray with baking paper (glad bake)

Spoon small cakes of batter & veg onto baking tray.

Put in a pre-heated oven (400 degrees F / 200 C)

They are cooked when you can push a skewer into the batter vegetable cake and it comes out with nothing sticking to it. (Takes about 15 to 20 minutes)
