Batter Vegetable Cakes

Batter Vegetable Cakes came into our household as a method of getting my grandson to eat vegetables. They immediately became a big hit with adults as well. Great simple recipe. Submitted by David McCarthy, Australia

Ingredients

  • 2 eggs
  • Self Raising Flour (All purpose flour)
  • Pinch salt
  • Milk
  • Corn kernels
  • Chopped onion
  • Chopped broccoli
  • Bacon pieces

Method

Make batter of sifted flour, salt, eggs and milk. Whisk vigorously until smooth.

Mix the vegetables into the batter - be as inventive as you wish.

Cover baking tray with baking paper.

Spoon small cakes of battered vegetables onto baking tray.

Put in a pre-heated oven (400F / 200 C)

They are cooked when you can push a skewer into the vegetable cake and it comes out with nothing sticking to it. Takes about 15 to 20 minutes.
