Beef Chow Mein

Beef Chow Mein is a fun dish because the rules that apply to chow mein are very loose and you can substitute ingredients to suit your taste. It is also a very good recipe to use when learning how to cook in a wok. You cannot harm the recipe if you decide to add a few extra vegetables that may be favorites of your family. If any vegetable doesn't work just leave it out next time. That's the way I learned to cook; it may not be scientific but it certainly works for some people.

A good tip is never substitute the sunflower and sesame oil for olive oil because olive oil doesn't suit high temperature cooking. All wok cooking is high temperature.

Ingredients:

2 tbsp sunflower oil

225g (8oz) Minute steak cut into 1 inch strips

1 clove of garlic, finely chopped

2 Carrots, shredded

1 Onion, finely chopped

1 Packet of beansprouts

3 tbsp Light soy sauce

1 tbsp sugar

1/2 tsp salt

1 tsp Sharwood's Pure sesame Oil

250g Egg noodles, cooked and drained

Method:

Cook the noodles as per instructions on packet.

Heat the sunflower and sesame oil in a wok.

Add the beef and stir fry for 4 minutes, until almost cooked.

Add garlic, onion, carrot, and stir fry for 2-3 minutes.

Add the beansprouts, soy sauce, sugar, sesame oil, noodles, and mix well.

Heat through and serve.

Serves 3 or 4.

Enjoy your beef chow mein.
