Blueberry Waffles

These light and fluffy Blueberry Waffles are great for Sunday brunch or as a special treat for Mom and Dad on their special day. They also freeze well, so make an extra large batch and keep on hand for a quick breakfast or even as an elegant dessert topped with ice cream.

Blueberry waffles with banana slices on top


  • 1 Cup of flour
  • 2 Tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg yolk
  • 1/4 Cup of skim milk
  • 1/4 Cup of orange juice
  • 1 Tbsp butter melted
  • 1 tsp orange peel, grated
  • 1/8 tsp orange extract
  • 4 egg whites
  • 1 Cup of fresh blueberries


Preheat the waffle iron.

Combine flour, sugar, baking powder and salt in a bowl.

Whisk the egg yolk, milk, orange juice, butter, orange peel and extract in a separate bowl.

Blend the wet mixture with the dry until just moistened.

Beat egg whites until stiff peaks form, then gently fold into the batter.

Stir in blueberries.

Cook waffles according to the directions for your brand of waffle iron.

Serves 4.
