Broccoli and Cheese Casserole

Ingredients

  • 2 Tbsp unsalted butter
  • 3 Tbsp chopped onion
  • 1 lb frozen, chopped broccoli
  • 1 can cream of chicken soup, undiluted
  • 1 can cream of mushroom soup, undiluted
  • 1 cup minute rice
  • 8 oz jar of cheese whiz

Broccoli and cheese casserole

Method

Preheat oven to 350 F.

Melt butter in a small pan.

Stir in onions and sauté for several minutes.

Pour mixture into a casserole dish with a lid.

Add both cans of undiluted soup and stir.

Add frozen broccoli, rice and cheese whiz. Stir until well blended.

Cover and bake for 1 hour OR microwave on high for 30 minutes.

If microwaving, stir every 10 minutes to avoid brown edges. If you prefer the browning, read a book while you wait.

When the casserole is finished collking, keep the lid on for 5 minutes before serving.

Yield: 6 servings. If you double the recipe, add 15 minutes in the oven or 5 minutes in the microwave.

Variations

Add interesting leftovers and/or one or more of these:
  • Grilled chicken or turkey
  • Chopped jalapeno peppers
  • Paprika
  • Chili powder
  • Diced fire roasted tomatoes
