Greek Chicken and Vegetables

Greek Chicken and Vegetables is one of my favorites because it can be cooked on the barbecue as well as in the oven. I recently had a dozen guests around for a barbecue and prepared a dozen portions of this recipe in addition to the usual steaks and chicken pieces. Guess what? The talking point after the food was this traditional Greek dish. Submitted by David McCarthy, Australia


  • 2 boneless chicken breasts, cut into strips
  • 1 can diced tomatoes
  • 1 red onion, finely diced
  • 12 stuffed olives (optional)
  • 1 clove garlic, crushed
  • 1 can green beans
  • 1 cup Feta cheese, crumbled
  • Salt and pepper to taste


Make 4 aluminum foil pockets.

Mix all ingredients in a bowl.

Divide equally between the 4 foil pockets and seal.

Place on a hot barbecue, away from direct heat for 20 minutes

Check that the chicken is cooked and serve directly from foil pockets.

Serves 4.


Cook in the oven if you prefer.
