Cilantro and Lime Salsa

Cilantro and Lime Salsa is a great addition to any barbecue because it is one of the few salsas that have an oriental flavor. I find it fantastic with barbecued chicken wings. Submitted by David McCarthy, Australia

Ingredients

  • 1 small onion, finely chopped
  • 1 cup fresh cilantro (coriander), chopped
  • 1/2 cup parsley, chopped
  • 1/2 cup salad oil
  • 6 Tbsp lime juice
  • 3 Tbsp distlled white vinegar
  • 2 cloves garlic, minced
  • 1 jalapeno or other small hot chile pepper, stemmed, seeded and minced

Method

Mix onion, cilantro, parsley, oil, lime juice, vinegar, garlic, and pepper in a non-metallic bowl.

Allow to stand in refrigerator for at least one hour, two is better.

Makes 2 1/2 cups.
