Cool Chicken Salad



Cool Chicken Salad is a quick to prepare and delicious to eat recipe that suits our rushed lifestyles. In terms of good diet this recipe stands above so many others. It contains grapes and pineapple and crunch is supplied by walnuts and/or pine nuts. I could talk about it for ages; the best thing to do is try it for yourself, enjoy the taste and revel in the fact that you're eating a healthy meal. - If you wish to serve bread with this salad try to make it wholegrain bread because this is far more healthy than other breads.

This is also a salad that you can either replace some ingredients or add extra's. This is your chance to be creative.

Ingredients: 8 oz (225 grams) cooked chicken breast, broken into pieces

1 oz (28 grams) celery, diced

1 oz (28 grams) onion, chopped

3 oz (85 grams) red seedless grapes

3 oz (85 grams) pineapple chunks, drained

8 oz (225 grams) mayonnaise (Use low-fat mayo if dieting)

1/4 teaspoon onion salt

1/8 teaspoon pepper

Method:

Toss all ingredients together and serve on a bed of fresh crisp lettuce. Top with walnut pieces and paprika. (You can add pine nuts too if you wish) This Cool Chicken Salad recipe serves 1
