Corn Casserole

Corn casserole makes an easy, tasty side dish. Add some extras like cheddar cheese or leftover chicken and you've made a main meal. Let your helpers watch our how-to video while you lay down on the sofa and pop a few bonbons.



  • 1 box of Jiffy brand corn muffin mix
  • 1 egg
  • 1 stick of butter (softened or melted)
  • 8 ounce of sour cream
  • 1 can of whole kernel corn (drained)
  • 1 can of creamed corn


Preheat oven to 350 F.

Mix all ingredients together and stir until smooth.

Coat a 9 x 9 baking pan with non-stick cooking spray.

Pour mixture into the pan and cover with aluminum foil.

Bake for 30 minutes.

Remove foil. Bake uncovered for an additional 30 minutes.

Experiment with adding one or more of the following ingredients:
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup jalapeno peppers, diced
  • 1/4 cup chilies, diced
  • 2 Tbsp honey
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1 pound cooked meat of any kind (ground beef, chicken, shrimp, steak, etc.)
