Cucumber and Onion Salad

This Cucumber and Onion Salad features cool, crisp cucumber slices in a zesty creamy sauce. Great as a side dish for cookouts and 4th of July gatherings.


  • 1/2 cup of sour cream
  • 3 Tbsp white vinegar
  • 1 Tbsp sugar
  • 1/4 tsp pepper
  • 4 cucumbers, sliced thin
  • 1 sweet onion, sliced thin and separated into rings


Whisk sour cream and vinegar together in a serving bowl.

Fold in sugar and pepper; whisk until sugar is dissolved and sauce is smooth.

Add cucumber and onions into the sauce.

Blend well until vegetables are completely coated.

Cover and chill for a minimum of 4 hours.

Stir before serving.

Add pimentos for a splash of color.

Serves 8.


Add romaine lettuce torn into small strips.

Use plain yogurt instead of sour cream, vinegar and sugar.
