Grilled Eggplant

This Grilled Eggplant recipe is a simple to make favorite. Marinate ahead and take along on camping trips or sports parties for a flavorful treat.

Grilled Eggplant Slices with Tomato and Mozzarello


  • 1 eggplant
  • 1 bottle of Italian dressing


Peel and cut eggplant into 3/8 inch slices

Pour salad dressing over eggplant slices in a shallow bowl.

Turn slices to coat well.

Allow to marinate for at least 15 minutes.

Grill over medium-high heat for about 8 minutes, turning occasionally to crisp on both sides.

Serves 4.
