Grilled Squash

Grilled Squash makes an excellent and simple side dish for any barbecued meal. A zesty homemade marinade that includes basil and oregano makes this a flavorful addition to any table.

Grilled Squash and Zuccini


  • 2 lbs. summer squash, sliced 3/8 inch thick
  • 4 cloves of garlic
  • 1/8 tsp of parsley
  • 1/8 tsp of basil
  • 1/8 tsp of oregano
  • 1/8 tsp of lemon thyme
  • 1/4 tsp of salt
  • 1/4 tsp of pepper
  • 4 Tbsp of olive oil


Blend oil with garlic, parsley, basil, oregano, thyme, salt and pepper in a large bowl. Stir until well combined.

Add squash and coat well.

Grill squash for 5 minutes over medium-high.

Turn and cook another 3 minutes or until tender.

Serves 4.
