Italian Chicken Pasta - Pollo Italiano Pasta

Italian chicken pasta is a low cost, quick to prepare meal that is fantastic for the 21st century lifestyle. It takes only ten minutes to prepare and cook, is full of goodness and tastes fantastic. What more do you want? I can't get there to cook it for you even though that would be great fun. - The thing I love most about traditional Italian dishes is that they are usually quite inexpensive to make but carry the full flavor of Italy to your dining room. Only Chinese Cuisine comes close to matching the Italians for value for money cooking.

Ingredients:

3/4lb (340 grems) Thin strips chicken breast

3/4 cup Italian dressing (may use low fat)

1 packet Italian style frozen vegetables (16 oz - 450 grams)

Hot cooked pasta (I like to use Fettucine.)

Grated parmesan cheese to taste

Method:

In large skillet, combine chicken and 1/3 of the Italian dressing.

Saute until chicken begins to brown.

Add vegetables and remaining dressing.

Cover; simmer 7-9 minutes until vegetables are crisp-tender, stirring frequently.

Cook pasta as per cooking instructions depending on which type you select.

Serve over pasta; sprinkle with cheese.

Enjoy your Italian Chicken Pasta with a glass of chilled dry white wine.
