Lobster Chicken Breast makes an excellent meal for one person, and especially good on a holiday alone. This recipe will take a little over half an hour to prepare and cook if you have your ingredients ready before you start putting it all together. Submitted by David McCarthy, Australia
Pre-heat oven to 350F (180C or Gas Mark 4). Saute the onion and celery in the clatified butter until soft. Remove from heat and mix in the lobster meat. Add salt and pepper to taste.
Dry the lightly pounded chicken breast and make a pocket in the center with a sharp knife.Fill this pocket with the lobster meat, onion and celery.What doesn't go into the pocket can be spread on the top. Place in the pre-heated oven for 20 minutes. The cream sauce and Jamaican stuffing can be prepared while the chicken cooks.
To serve: Make a coulis of the raspberries. (Lightly crush them onto your plate.) Place the cooked chicken breast on top of the raspberry coulis. Make your Jamaican Stuffing into a ball and place beside the chicken. Add one of the cream sauces over the chicken just before serving. Serve with a side salad.
