Low Fat Brownies

Low Fat Brownies are just about the last thing you'd think of when weight watching. Don't worry about this recipe; it's tasty and remains low fat providing you eat in moderation.

Who said the thin folks should have all the fun? When you diet you need to treat yourself once in a while for what you have achieved; this is an ideal way to do that.

If you don't tell the family that this is a diet recipe, they'll eat it with you and enjoy it, too. Submitted by David McCarthy, Australia

Ingredients

  • 1/2 tsp instant coffee powder
  • 1-1/4 tsp hot water
  • 1-2/3 cups confectioner's sugar (castor sugar)
  • 2/3 cup flour
  • 1/4 cup cocoa
  • 3/4 tsp baking powder
  • 1-1/2 ounces (42 grams) unsweetened chocolate
  • 2 Tbsp + 2 tsp vegetable oil
  • 1 tsp unsalted butter
  • 2 Tbsp light corn syrup
  • 2 tsps vanilla extract
  • 2 large egg whites

Method

Preheat oven 350 F (around 170 C)

Line 8" (200mm) square pan with foil. Spray with vegetable oil.

Combine coffee and water. Stir till dissolved.

Sift sugar, flour, cocoa, baking powder and salt in bowl.

In medium saucepan, combine chocolate, oil and butter. Cook over low heat till melted and smooth.

Remove from heat. Stir in corn syrup, vanilla and dissolved coffee.

Stir in egg whites.

Add dry ingredients and mix till just blended.

Spread in pan.

Bake brownies 21-25 minutes till top is almost firm.

Cut into 12 bars
