Mashed Potatoes Recipe

Do you expect a mashed potatoes recipe to include apples? This one does! And makes a good side dish with lamb, salmon or even hamburgers.


  • 2 lb. white potatoes, peeled and cut into quarters
  • 1 lb. apples, peeled, cored and sliced
  • 1 T sugar
  • 4 T butter
  • crumbled bacon (optional)
  • parsley (optional)


Cover potatoes with water in a large saucepan over medium heat. Bring to a brisk boil and cook until tender, about 10 minutes.

In a different saucepan, place the apples, 1 Tbsp of water and sugar. Cook over medium heat until tender, about 8 minutes

Drain potatoes well and mash with a potato masher.

Add cooked apples and butter. Stir well until blended.

Garnish with bacon and parsley.

Serves 4.
