Moroccan Bean Salad

Moroccan Bean Salad made with chick peas, brings one of North Africa's most outstanding tastes into your home. You will find a variety of subtle flavors without a single one overpowering the others.

Each time I look at a Moroccan recipe, I think of Humphrey Bogart and Ingrid Bergman in "Casablanca". Moroccan recipes express the lively flavors of the region better than any others. Ingredients

  • 16 oz of canned or cooked chickpeas
  • 1/2 cup of black olives (not canned olives)
  • 2 tomatoes, chopped
  • 1 purple onion, diced
  • 1 sweet red pepper, diced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2-3 garlic cloves, crushed
  • 1/2 tsp cayenne
  • 1 Tbsp cumin
  • 1/4 cup freshly chopped parsley

Method

Mix all ingredients and serve chilled.

Serves 4
