Old Fashioned Egg Salad

Old Fashioned Egg Salad makes no pretence of being a modern meal. It is simply so good that it has stood the test of time and still enthralls diners. The ingredients are simple; the result is delicious.

Before you boil an egg, it is wise to remove it from the fridge half an hour before you place it in water. Eggs always taste better when you start cooking them at room temperature.

When cooking eggs for use in a salad, a simple method is to place the eggs into a saucepan of cold water, heat the water to boiling and then switch off the heat and allow them to stand in the cooling water for ten to twelve minutes.

Run under cold water while peeling. This will give you a perfect salad egg.


Ingredients

1/4 cup mayonnaise

2 teaspoons lemon juice

1 teaspoon dried minced onion or finely diced red onion 1/4 teaspoon salt

1/4 teaspoon pepper

6 hard boiled eggs, chopped

1/2 cup finely chopped celery

Lettuce leaves or Bread



Method

In a bowl, combine mayonnaise, lemon juice, onion, salt and pepper.

Stir in eggs and celery. Cover and chill.

For each serving of old fashioned egg salad, spoon about 1/2 cup onto a lettuce leaf or spread on bread.
