When making Pasta Fruit Salad you will find this dish so versatile that you will be able to substitute in-season fruits for out-of-season fruits and generally mix and match to suit your taste or mood. Submitted by David McCarthy, Australia
Cook pasta according to package directions.
Chill in cold water and drain well. Blend orange juice concentrate and yogurt well.
Toss mixture with remaining ingredients and pasta.
Cover and chill thoroughly.
Serve on a bed of lettuce.
Garnish with fresh strawberries.
A good tip with strawberries is to sprinkle lightly with Balsamic vinegar and this really brings the taste out.
