Pineapple Casserole Recipe

This Pineapple Casserole Recipe doubles as a delicious side dish to ham or a refreshing dessert. Top with mini marshmallows and serve at Easter for a treat guests will love.


  • 1/2 cup sugar
  • 3 Tbsp self-rising flour
  • 1 (20 oz.) can pineapple tidbits, reserve juice
  • 1 cup sharp cheddar cheese, grated
  • 1/2 cup crackers, crushed
  • 1/4 cup butter, melted


Preheat the oven to 300F degrees.

Toss sugar and flour together in a large mixing bowl.

Pour in pineapple and juice.

Add cheese and mix until blended.

Coat a 2 qt casserole dish with a non-stick cooking spray.

Spoon the mixtures into the dish. Coat with cracker crumbs.

Pour melted butter over the crumb topping.

Bake 20 minutes or until bubbly.

Serves 6.
