Pineapple Salsa

Pineapple Salsa with apricot preserve is a delightful fruity salsa that is sure to wow your guests when served with a barbecue. Too often chefs forget that salsa doesn't have to be a hot concoction. The secret of any meal is variety and if you give them a choice of sweet and savory salsa you'll be surprised how many guests opt for a little of each. This salsa is also very popular with children because it is sweet.

Ingredients

• 1 cup fresh pineapple, peeled, cored and finely chopped
• 1/2 cup red onion, finely chopped
• 1/2 cup apricot preserve
• 1/4 cup fresh cilantro (coriander), chopped
• 2 Tbsp fresh lime juice
• 1-1/2 Tbsp jalapeno chili pepper, seeded and minced
• Salt and pepper

Method

Toss all ingredients in small bowl to blend.

Season with salt and pepper.

Cover and chill.

It is best to make this dish at least an hour before serving and cool it in the refrigerator. If you are really well organized, it could be made a day ahead.
