I make it during the high season for plums to be sure of getting that very special flavor. The plums should have just the first hint of softness when you test them in the palm of your hand. At this point they are just a little less than fully ripe. The taste has sweetness intermingled with tartness that will give the finished salsa just the right consistency.

In a non-metallic bowl, stir together the plums, onion, cilantro, mint, jalapeno, lime juice and sugar.
Salt and pepper to taste.
Chill for a few hours before serving.
