By adding Sauces to your meal, you convert your menus from the ordinary to the special, whether for family or guests. There are many types available on the supermarket shelf these days, but I have never found one that replicates the taste of homemade.

• Basic Butter Sauce
• Basic Cream Sauce with Variations
  Sweet variations include: Chocolate; Liquer.
  Savory variations include: Blue Cheese; Three Cheeses; Green Peppercorns; Mustard; Mushrooms.
• Chicken Sauce
• Hollandaise Sauce with Variations
  Bearnaise Sauce; Mousseline Sauce.
