By adding Sauces to your meal, you convert your menus from the ordinary to the special, whether for family or guests. There are many types available on the supermarket shelf these days, but I have never found one that replicates the taste of homemade.

• Basic Pesto Sauce with Variations Basil; Coriander; Mint; Rocket.
• Basic Concasse Sauce with Variations Tomato; Bell Pepper.
• Chicken Sauce
• Chicken in Pineapple Sauce Keep some extra pineapple sauce on hand to make a plain meal special.
• Cinnamon Rum Hard Sauce
• Cranberry Sauce
• Duck Sauce
• Hollandaise Sauce with VariationsBearnaise Sauce; Mousseline Sauce.
• Pasta Cream Sauce
• Tartar Sauce
• Vegetables in Coconut Sauce for Two Make an extra batch of the coconut sauce for future quick meals.
