Lamb Shanks and Sausages with Beans

Lamb Shanks and Sausages and Beans is a real old fashioned meal and with Cannelini beans added it is filling, nutritious and very, very tasty. This is low-cost recipe can be cooked all day in the crock pot. Submitted by David McCarthy, Australia

Ingredients

  • 2 onions, chopped
  • 3 Tbsp butter
  • 1 pound (450 grams) Cannelini beans, soaked overnight and drained. (You can use any white bean like butter beans or Haricot beans, but Cannelini beans are best.)
  • 3 lamb shanks
  • 4 carrots, sliced
  • Salt and pepper to taste
  • 1 bay leaf
  • 4 garlic sausages, sliced 1/2" thick

Method

Place beans in bottom of slow cooker and add remaining ingredients except sausages, with 1 1/2 quarts water.

Cover and cook on High 2 hours, then on Low 10 to 12 hours.

Add sausages, cover and cook on High 30 minutes.

Serves 3.
