Shrimp Pasta Salad for Two

Shrimp pasta salad is part of our Romantic Dinner Recipes collection. Serve as a side dish or a light lunch. Garlic bread goes nicely with this make-ahead meal. For Valentine's Day, cut the bread into the shape of a heart if you dare.

  • 1/2 C uncooked elbow macaroni
  • 1/2 lb. small shrimp, cooked
  • 1/2 C frozen peas, thawed (or fresh peas in season would be perfect)
  • 1 rib of celery, chopped fine
  • 1 small onion, chopped fine
  • 3/4 C mayonnaise
  • 1/4 C French dressing
  • 1 T sugar
  • 1 T white wine vinegar
  • 1 t paprika
  • 1/2 t salt
  • 1/2 t garlic powder
  • 1/2 t pepper

Cook elbow macaroni. Drain, rinse with cold water and drain again.

Place macaroni into bowl. Add shrimp, peas, celery and onion. Toss to combine.

In a separate bowl, whisk together mayonnaise, French dressing, sugar and vinegar.

Add paprika, salt, garlic powder and pepper. Whisk to blend.

Pour dressing over salad and toss to coat all ingredients well.

Cover and chill at least 4 hours before serving.
