Southern Meatloaf

This Southern Meatloaf recipe coats the ground beef mixture with a sauce made of brown sugar, mustard, cider vinegar, Worcestershire and tomato sauces.

While each Southern state has its own version of meatloaf, this one doesn't take long to put together and the taste is terrific. Submitted by David McCarthy, Australia

Ingredients

  • 2 lbs lean ground beef
  • 1/2 cup bread crumbs
  • 1 medium onion, finely chopped
  • 1 egg, beaten
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 can tomato sauce, 8-ounce (225 grams) divided
  • 1/2 cup water
  • 2 Tbsp cider vinegar
  • 3 Tbsp dark brown sugar
  • 2 Tbsp prepared mustard
  • 2 Tbsp Worcestershire sauce

Method

Combine ground beef, bread crumbs, onion, egg, salt, pepper, 1/2 can of tomato sauce and water.

Mix together well. Form into a loaf shape and place in shallow 7 x 10 inch (175 x 250 mm) pan.

In a saucepan, combine cider vinegar, brown sugar, prepared mustard, rest of tomato sauce and Worcestershire sauce. Bring mixture to boil.

Pour sauce over meatloaf.

Bake at 350F (about 175C) for 1 hour 15 minutes. Baste occasionally.

Serve Southern Meatloaf hot. Leftover meatloaf is good in sandwiches, too.
