Stuffed Apples is a recipe that proves that anything you cook in a conventional oven can also be cooked in a crock pot. It is quick to prepare and once in the slow cooker you can forget about it.
I can remember my mother making this dessert. Today it is still one of my favorite desserts even though the stuffing is a little more sophisticated. Another advantage we have today is that we can use a crock pot to make them and that makes it easy if you lead a busy life. Submitted by David McCarthy, Australia
Wash and core the apples, but don't peel them. In a pan that will fit in your slow cooker, stand up the apples. Butter the pan first.
Fill the core cavities with the brown sugar, raisins, chopped dried apricots and orange peel.
Top with butter. Place the pan in the crock pot. Pour the hot water around the pan. Sprinkle the orange juice concentrate over the apples. Cover and cook on low for 3-5 hours or until apples are tender.
