Sweet Potatoes and Apples

I started making this sweet potatoes and apples recipe about 19 years ago, when my oldest son was 5. He loved it, as did the rest of the family. Every year my children (now 24, 20 & 19) get the Thanksgiving menu a few weeks in advance. If this is not on the list, then I hear about it.

For the last 2 years, my middle son has been away at Thanksgiving, at college. He cooks a dish to share with his friends who are also staying at school for these few days and it has become a hit with his friends. Needless to say, it is on his menu again this year! Submitted by Lisa, TN

  • 2-3 Tbsp oil
  • 3-4 medium sweet potatoes
  • 3-4 granny smith apples
  • 2 tsp cinnamon (this can be adjusted to your taste)
  • 1/4 cup sugar
  • 1/4 cup pecan pieces (optional)

Cut the sweet potatoes and apples in approximately 1/3 inch slices.

Pour the oil in a medium skillet and place on medium heat.

Alternate the sweet potatoes and apples in rows in the skillet. Be careful not to burn your fingers!

Combine the cinnamon and sugar.

Sprinkle cinnamon sugar over the potatoes and apples.

Cook on medium heat, adjust if the potatoes and apples begin to burn/stick. Test with a fork to determine if potatoes are tender.

Once tender, remove with a spatula to a serving dish. Sprinkle with pecans (optional) and enjoy!
