Sweet Potato Pie

Sweet Potato Pie is a way to get your daily servings of vegetables and sugar all at the same time. Enjoy! Submitted by David McCarthy, Australia


  • 3 eggs
  • 1 cup sugar
  • 1 cup cooked sweet potato, beaten or strained
  • 3/4 cup evaporated milk
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 2 tsps vanilla extract
  • 1 10-inch unbaked pie shell


Beat together the eggs, sugar, and sweet potatoes. Add the milk, butter, and vanilla.

Pour the filling into the pastry shell.

Bake at 400 degrees Farenheit (around 200 C) for 10 minutes. Reduce the heat to 325 degrees Farenheit (175 C) and bake for 30minutes more.

The pie is done when a knife inserted in the center comes out clean.

Yields 6 to 8 servings.
