Taco Meatloaf

Experimenting lead to this Taco Meatloaf with a spicy flair. Make as suggested by our reader, or submit your own variation of this ground beef recipe. Submitted by Nancy Scott, Wisconsin, USA


  • 1-1 1/2lb. ground beef
  • 2 eggs
  • 1 medium onion, diced
  • about 1/4 cup green pepper, diced
  • 1 jalepano pepper, diced
  • 1 package taco seasoning
  • 1/2 cup bread crumbs or just add more taco seasoning
  • black olives (optional)


Combine all ingredients and put in loaf pan.

Bake at 350F (180C) for approximately 45 minutes.

Let it sit for a while. Slice and place in a serving platter. Pour salsa over the top (or you could use a can of diced tomatoes) then reheat.
