For a sweet breakfast or a side with tea, try this Applesauce Nut Bread. Pecans and nutmeg blend with cinnamon and apple cider in this tasty treat. Also make it for dessert served warm with a scoop of vanilla ice cream.
Ingredients
2 cups unbleached flour
1 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/4 tsp ground cloves
1/4 tsp nutmeg
1/2 cup pecans, chopped fine
1/2 tsp salt
2 lg. eggs
1/2 cup canola oil
1 cup unsweetened applesauce
1/4 cup apple cider
Method
Combine flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg, nuts, and salt in a large mixing bowl.
Stir well to mix all the ingredients.
In a separate bowl place the egg, oil, applesauce, and apple cider.
Beat with an electric mixer until well blended.
Add to the dry ingredients.
Stir until completely moistened.
Preheat oven to 350F degrees.
Grease and flour a loaf pan.
Pour the batter into the loaf pan.
Bake 60 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool completely before slicing.
