You won’t notice Banana French Toast is a diet brunch recipe. You won’t need anything extra on this classic made with egg whites and topped with warm mashed banana and yogurt.
Ingredients
1/2 cup skim milk
4 egg whites
4 slices whole wheat bread
1/2 cup vanilla low-fat or non-fat yogurt
1 banana
1 Tbsp brown sugar
1/2 tsp vanilla extract
Rum flavoring
Instructions
Mix the milk and egg whites and dip the bread into the mixture.
Cook in a nonstick pan on medium. You can use a coating spray on the pan.
Cook each side until brown.
Take the whole banana still in its skin and massage it until it is mushed up inside the skin. Now peel and put the mash into the hot pan, add vanilla and rum flavoring and brown sugar, heat till warm.
Top toast with the banana topping and a Tbsp or so of the vanilla yogurt.
