Breakfast Sausage Recipe

 This Breakfast Sausage Recipe is a healthy alternative to traditional sausage. Extra lean turkey (read the label to make sure), apples and brown rice form a healthy base while thyme, cayenne pepper and allspice provide bold flavor.

Ingredients

  • 1 tart apple, peeled, cored and shredded
  • 1/2 Cup of brown rice, cooked
  • 2 Tbsp onion, grated
  • 2 garlic cloves, minced
  • 1 1/2 tsp sage
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1/8 tsp cayenne pepper
  • 1/8 tsp allspice
  • 1 lb. extra lean ground turkey

Instructions

Toss apples with rice, onion and garlic in a large mixing bowl.

Season with sage, salt, pepper, thyme, cayenne pepper and allspice.

Crumble the ground turkey into the mixture and blend with your hands.

Form 8 patties.

Coat a skillet with cooking spray and cook the patties over medium heat.

Cook for 5 minutes, flip and cook another 5 minutes.

Patties are done when juices run clear after being poked with a fork.

Serves 4.
