Grilled Apple Cake

 Make this Grilled Apple Cake Recipe ahead of time and just grill when you’re ready. Don’t care for Granny Smith apples? Substitute another or use peaches, nectarines or pears. Top it off with a scoop of ice cream.

Ingredients

  • 4 cups of boiling water
  • 1 tsp salt
  • 1 cup cornmeal
  • 2 Granny Smith apples, peeled and chopped fine
  • 1/4 cup of sugar
  • 1/8 tsp nutmeg
  • 2 Tbsp of butter, melted

Method

Simmer water in the bottom pan of a double boiler.

Put the salt and the 4 cups of boiling water into the top pan.

Stir or whisk in cornmeal to avoid lumps.

Cover and cook until fluffy, (about 50 minutes). Stir for 1 minute every 30 minutes.

Stir in sugar, apples and nutmeg and blend well.

Cook for 15 minutes.

Spray a 9 X 13 baking pan with a non stick cooking spray.

Spread the mixture into the pan.

Cover and chill for 2 to 4 hours until the mixture solidifies.

Slice the corn cake into 12 squares and brush each square on both sides with the melted butter.

Over medium temperature, grill the squares 3 to 4 minutes on each side or until golden brown.

Serves 6.
