Grilled Mushrooms

These Grilled Mushrooms make a tasty appetizer or side dish. Homemade marinade featuring sherry and garlic give the mushrooms a bold, zesty flavor. Prepare ahead for tailgate parties and barbecues.

Ingredients

  • 1/3 cup of dry cooking sherry
  • 3 Tbsp of olive oil
  • 1 Tbsp of sherry vinegar
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 lbs fresh mushrooms, trimmed

Instructions

Whisk sherry, oil and vinegar in a large mixing bowl until blended.

Mix in garlic, thyme, salt and pepper.

Add mushrooms and stir until well coated.

Cover and marinate for at least an hour until most of the liquid is absorbed.

Lightly oil the grill grate and heat to medium-high.

Thread mushrooms onto 4 skewers.

Grill for 10 minutes, turning frequently to brown on all sides.

Tip: If using wooden skewers, make sure to soak them in water for 30 minutes so they don’t burn.

Serves 6.
