Pumpkin Fudge

For an easy to prepare sweet seasonal treat, try this Pumpkin Fudge Recipe. Walnuts add flavor and crunch to this simple and delicious candy. Makes a great gift for holidays and parties.

Ingredients

4 cups sugar
1 cup milk
3 Tbsp light corn syrup
1 cup pumpkin puree
3 Tbsp unsalted butter, broken up
1 tsp vanilla
2 cups walnuts, coarsely chopped

Instructions

Butter a square 9-inch pan well on the bottom and sides. Set aside.

Combine milk, sugar, corn syrup and pumpkin in a heavy sauce pan. Stir well.

Place pan over medium heat.

Stir continually until the sugar is completely dissolved.

Stop stirring and cook until mixture reaches 238F degrees on a candy thermometer. Remove from stove.

Add butter but do not stir.

Let the mixture set until it reaches 140F degrees.

Stir in the vanilla.

Add walnuts and stir briskly for 45 seconds with a wooden spoon.

Pour into the prepared baking pan.

When the fudge begins to harden, cut into squares.

Cool completely before removing from pan.

Yield: 2 lbs.
