This creamy Salmon Salad Recipe is a simple to make but an elegant luncheon treat. Smoked salmon and fresh cucumbers are mixed into a rich homemade dressing that features sour cream, brown mustard and horseradish for extra kick. Makes a beautiful main dish served over a bed of crisp Romaine lettuce.
Ingredients
1 lb smoked salmon, flaked
1 cucumber, washed, scored, sliced lengthwise, then quartered
2 tsp prepared horseradish
2 tsp brown coarse mustard, like Old World
1/2 cup sour cream
1 fresh lemon, juiced
1 Tbsp fresh dill, finely chopped
1/2 tsp kosher salt
1/4 tsp black pepper
Romaine lettuce
lemon wedges

Whisk together horseradish, mustard, sour cream, lemon juice, dill, salt and pepper in a large bowl.
Carefully add in salmon and cucumber. Toss to coat evenly. Season with salt as desired.
Divide Romaine lettuce leaves between 4 to 6 salad plates.
Top each bed of lettuce with the salad mixture and garnish with lemon wedges.
Yield: 4-6 servings
