These Stuffed Chili Peppers are a great grilled appetizer. Prepare ahead of time for quick tailgate party treats or as a side dish for tacos and burritos.
Ingredients
8 large chili peppers
1 (16 oz.) pkg. Monterey Jack cheese, shredded
Instructions
Grill chili peppers directly on grate over medium heat for about 10 minutes, turning occasionally. Skin should char when done.
Seal the peppers in a plastic bag and allow to steam for 10 minutes.
Peel the peppers, slit and remove seeds.
Stuff with cheese and close each pepper with toothpicks.
Wrap the peppers tightly in foil.
Grill for 10 minutes.
Open the foil and let peppers cool for 5 minutes to let cheese firm up.
Serves 8.
