Taco Meatloaf

Taco Meat photoExperimenting lead to this Taco Meatloaf with a spicy flair. Make as suggested by our reader, or submit your own variation of this ground beef recipe. Submitted by Nancy Scott, Wisconsin, USA

Ingredients

1-1 1/2 lb. ground beef
2 eggs
1 medium onion, diced
about 1/4 cup green pepper, diced
1 jalapeno pepper, diced
1 package taco seasoning
1/2 cup bread crumbs or just add more taco seasoning
black olives (optional)

Instructions

Combine all ingredients and put in loaf pan.

Bake at 350F (180C) for approximately 45 minutes.

Let it sit for a while. Slice and place in a serving platter. Pour salsa over the top (or you could use a can of diced tomatoes) then reheat.
